Broccoli Fritters

*ALERT*
Not very healthy, but sound so amazing! If I can stop drooling, I may be able to help find an alternative recipe, but you are still eating broccoli, so that's a plus, right?!

Also, sounds like a super quick thing to whip up!

Ingredients:
2 cups steamed broccoli crowns
1/2 c panko bread crumbs
1/4 c cream cheese
1 T basil pesto
1 egg
sea salt, pepper

1. Pulse broccoli in food processor until smooth.
2. Spoon into mixing bowl. Stir in remaining ingredients
3. Mash together and lightly sprinkle with the sea salt and pepper.
4. Make small patties with hands and place on parchment paper.
*If batter seems too sticky, then place in the freezer for about 10 minutes!
5. Heat 1 tablespoon on pan over medium heat.
6. Cook each fritter on each side until light brown.

Isn't your mouth watering just thinking about it?! Can't wait to try it. I need to find a healthier alternative to the cream cheese.... but there isn't much of it, so I will just use it as a cheat every so often.... Hmmm.
